Why Japanese Green Tea Comes Without Milk or Sugar
Order tea in Britain and it arrives with a jug of milk and a bowl of sugar beside it. Order tea in Japan and it arrives alone, usually free, and nobody offers you anything to put in it.
The explanation you will usually be given is tradition. That is not much of an answer, because British tea drinking is also a tradition, and traditions that survive centuries generally survive because they work. Something has to make one of them work and the other not.
Something does. The difference between green tea and black tea is one processing step, and that step changes the size of the molecules responsible for astringency. Milk works on the large ones. Green tea does not have them.
Here is what is actually going on in the cup.
The one step that separates them
Green tea and black tea come from the same plant. What separates them is what happens in the first hours after picking.

If you only remember one row: milk removes astringency from black tea, and has nothing to remove from green tea. Everything else follows from that.
Oxidation is what makes milk useful
Fresh tea leaves contain enzymes that begin oxidising the moment the leaf is broken. Black tea production lets that happen deliberately — the leaves are rolled to rupture the cells and left for hours while the catechins react and join together into larger compounds, the theaflavins and thearubigins that give black tea its colour and its body.
Japanese tea production does the opposite, and does it fast. Within hours of picking, the leaves are steamed to deactivate those enzymes before anything can oxidise. That is the entire reason Japanese tea is green: the reaction never got started.
So the two teas end up with chemically different astringency. Black tea has large, polymerised polyphenols. Green tea has the small original catechins, in quantity.
Why that makes milk work in one cup and not the other
Astringency is not a taste. It is a physical sensation — tea polyphenols bind to the proteins in your saliva, the saliva stops lubricating, and your mouth feels dry and rough.
Milk interrupts this, because casein, the main protein in milk, gives those polyphenols something else to bind to before they reach your saliva. The astringency drops away and the tea tastes rounder and fuller.
The catch is that this binding depends on molecular size, and gets stronger as the polyphenol gets larger. Black tea's theaflavins and thearubigins are exactly the large, polymerised molecules that bind casein strongly. Green tea's catechins are small monomers, and they bind far more weakly.
The practical result is that milk in green tea does not do the job it does in black tea. There is little astringency for the casein to strip out, so what you mostly get is dilution and a cloudy, slightly flat cup. The tea does not become smoother. It becomes less.

Sugar has a different problem
Sugar is a matter of taste rather than chemistry, and the honest version of the answer has several parts.
Good Japanese green tea already tastes sweet, and not because of sugar. Shading and early picking build L-theanine, an amino acid that reads on the palate as sweetness and savoury depth — the quality Japanese tea is prized for and priced on. Adding sugar to gyokuro covers precisely the thing you paid for.
There is also a historical layer. Sugar was expensive and scarce in Japan for most of the period in which tea drinking became a daily habit, and the tea culture that formed around the tea ceremony treated the flavour of the leaf itself as the point. Sweetness was handled separately, by the sweets served alongside the tea rather than dissolved in it. That division has never really gone away: a bitter bowl of matcha is served with something intensely sweet, not sweetened.
But if you stop the explanation there, you get the wrong idea about Japan — because Japan does drink sweetened green tea, and quite a lot of it.
The sweetened green tea nobody mentions
Here is the part that surprises people, including people who have read a great deal about Japanese tea.
In English, "green tea" means the unsweetened leaf drink. In Japanese, the borrowed word guriin tii — "green tea" — usually means something else entirely: matcha that has been pre-mixed with sugar, sold as a powder for stirring into cold water. Established tea houses in Uji sell it with "sweetened" printed on the packet, next to their ceremonial matcha, without any sense of contradiction.
It is a summer drink, associated particularly with the Kansai region, where tea shops have historically kept it churning in chilled dispensers in the shopfront. Mixed with milk instead of water it becomes matcha ore, which is roughly the ancestor of every matcha latte in every café outside Japan. A related product, usuchatou, blends matcha with sugar and a little cinnamon for the same purpose.
So the accurate statement is not that Japanese people do not sweeten green tea. It is that sweetened green tea is treated as a different drink, with its own name, rather than as a variation of the cup on the table. Nobody in Japan sweetens brewed sencha, in the same way nobody in Italy sweetens an espresso by turning it into a milkshake — the sweet version exists, it is popular, and it is understood to be its own thing.
Once you know that, the English-language framing of unsweetened green tea as a discipline, or as evidence of some particular restraint, falls apart. Japan just files the sweet version under a different heading.
Where milk actually does work
Two Japanese teas take milk well, and both are exceptions for reasons that fit everything above.
- Matcha. You are drinking the whole leaf in suspension rather than an infusion, so the concentration is high enough to survive dilution. This is why matcha lattes work and sencha lattes are not a thing
- Hojicha. Roasting drives off much of what is delicate in green tea, leaving robust toasted flavours that milk cannot flatten. Hojicha lattes have become a genuine café category in Japan over the past decade
Neither of these contradicts the chemistry. They sidestep it — one by sheer concentration, the other by replacing the delicate compounds with roasted ones before the milk arrives.
If you want to sweeten it anyway
Do. The point of this article is the mechanism, not permission.
Two things are worth knowing before you do, though, because they will make the result better:
- Cold tea takes sugar far better than hot tea. Sweetened iced green tea is a normal drink in Japan; sweetened hot sencha is not. Some of that is habit, but cold brewing also produces a sweeter, less astringent base to begin with
- Start from matcha or hojicha rather than sencha. If you want the sweet, milky version of Japanese tea, you will get a much better drink by beginning with a tea built to survive it. That is what Japan did

Sugimoto Tea
Kuki-hojicha — roasted green tea stems, loose (Shizuoka, 227g)
Hojicha is green tea roasted until brown: toasty, low in caffeine, and hard to brew badly. This one is made from roasted stems rather than leaf, which gives a lighter, sweeter cup than leaf hojicha. It is a bulk size, which suits how hojicha is actually drunk in Japan — by the pot, in the evening, without ceremony. Grown in Shizuoka.
The one thing genuinely worth avoiding is putting sugar and milk into an expensive shaded tea. Gyokuro costs what it costs because of the theanine sweetness that shading produces, and covering it is an expensive way to arrive at a drink you could have made better for less.
The short version
- Green tea is heated straight after picking to stop oxidation; black tea is oxidised on purpose
- That leaves green tea with small catechins and black tea with large polymerised polyphenols
- Milk works by giving those polyphenols casein to bind to instead of your saliva — and the binding gets stronger the larger the molecule, which is why milk transforms black tea and merely dilutes green tea
- Good Japanese tea is already sweet from theanine, not sugar. Sweetness in the tea ceremony lives in the sweets, not the cup
- Japan does drink sweetened green tea — sugar-mixed matcha sold as guriin tii, drunk cold in summer. It is simply classified as its own drink
- If you want milk or sugar, start from matcha or hojicha, and preferably cold
